2024 台灣美食節

台灣美食節向澳洲觀眾展示了台灣豐富多元的美食文化,同時也為台灣居民帶來一份家鄉的味道。台灣多樣的歷史背景造就了豐富包容的飲食傳統,美食成為文化的深刻表達。澳洲多元文化社會擁抱全球風味,其中台灣小吃更是以其獨特性脫穎而出。透過這次美食節,大家可以透過美食深入體驗台灣文化,加深對台灣文化的認識,同時也為澳洲的美食地景增添更多色彩。

今年的美食節在雪梨的Prefecture 48舉行, 結合了台灣的美食、藝術和文化,將由台灣主廚 Omar Hsu 攜手Prefecture 48主廚Hiroshi Manaka帶來不同料理方式的台灣經典料理。另一位Prefecture 48主廚Takashi Yamamoto則與台灣廚師Chang-yun Chiang帶來台灣小吃與其他經典料理。此外,藝術家Ruth Li的雕塑作品、古箏與DJ的傳統音樂表演,正宗的台灣茶道,以及台灣咖啡品鑑都將豐富這場沉浸式的體驗,共同呈現台灣豐富多彩的飲食和藝術遺產。

坐落於著名的歷史文化區域中,Prefecture 48擁有六個獨特的場地,每個場地皆由澳洲頂尖人才精心設計,展示日本料理的精湛藝術形式與活力流動。更令人期待的是,Prefecture 48將在整個活動中提供精緻餐點和飲品套餐。

 

本次活動的核心概念是展現 美食、美術美麗的島(ILHA FORMOSA)

  • 美食:將在台灣美食節中展現的台灣料理融合了中國、日本與東南亞的影響。台灣主廚Omar Hsu 與 Chang-yun Chiang將呈現傳統料理,而 Prefecture 48 的廚師則會加入他們的創意,結合 Michael 和 Jack 的童年食譜,打造出一場新舊、在地與全球風味的融合。
  • 美術:台裔澳洲女青年艺术家 Ruth Li 她的作品唤起了梦幻般的乌托邦幻想,同时表现出生命的无常与脆弱。她的创作以雕塑为载体,探索传统和多元文化中美的概念和跨文化语言。將她的文化傳承融入雕塑作品中,象徵更新、生命循環與時間流逝。她的作品反映了個人的冥想,包含對變遷、季節與回歸大地的思考,捕捉深刻的內省瞬間。
  • 美麗的島:台灣,又稱為「美麗之島」ILHA FORMOSA,自然、文化與歷史完美交融。本次節慶透過豐富的味覺享受、傳統美食與迷人的藝術,展現台灣的獨特美麗。融合了島嶼的美食文化與藝術表現,邀請來賓親身體驗台灣的魅力與活力文化。

三者完美融合,讓賓客全方位沉浸於台灣文化之中。

 

活動亮點

Ruth Li雕塑展出

李如詩(1992年生於台北)於2013年在澳洲國立藝術學院取得美術學士(榮譽)學位。她的作品探索傳統與多元文化中的美、超越與崇高,並以跨文化的語言傳達精神層面的意涵。她透過層疊的影像來隱喻自我,思考人類存在的短暫性。

 

台灣大廚Ommr與P48主廚Hiroshi Manaka的料理展示

我們很榮幸邀請到台灣的大廚 Ommr Hsu,與P48主廚Hiroshi Manaka合作,展現台灣精緻料理與日法風味的精彩“廚藝碰撞”。準備好見證兩位頂尖主廚激盪出的創意火花,讓美食藝術展現於您的眼前!

 

台灣主廚 Omar Hsu 擁有超過二十年在澳洲知名餐廳的工作經歷,包括曾在名廚Matt Moran旗下的Solotel、Aria Restaurant及Barangaroo House擔任要職。在這段豐富的經驗之後,徐主廚創立了Ommi’s Food & Catering,一家專注於亞洲風味冷凍料理和餐飲服務的公司。

主廚Hiroshi Manaka 在烹飪界備受尊敬,他在歐洲的米其林星級餐廳中磨練技藝。他的旅程始於意大利的 Villa Crespi 和 Da Vittorio,之後他深入西班牙的美食熱潮,曾在聖塞巴斯蒂安的 Mugaritz 和德尼亞的 QuiQue Dacosta 等著名餐廳工作。

 

台灣廚師Chang-yun Chiang與P48 廚師Takashi Yamamoto於IBUSHI的料理展示

在IBUSHI展開一場美食之旅,台灣寶島餐廳的主廚Chang-yun Chiang與Prefecture 48的主廚Takashi Yamamoto攜手呈現精湛的料理藝術。他們將Michael和Jack充滿懷舊味道的童年食譜,融入創意巧思,為大家帶來全新的台灣風味

Chang-yun Chiang是寶島餐廳的負責人及主廚,寶島是雪梨知名的正宗台灣餐廳。「寶島」象徵台灣這片珍貴的土地,寶島餐廳不僅注重道地美味,更重視熱情待客之道。從踏入餐廳那一刻起,就像回到家一樣,溫馨而自在。

Takashi Yamamoto 在這個行業已有超過二十年的經驗,他曾在燒肉和懷石料理領域受訓與實踐,之後隨著內心的熱愛,專注於燒肉成為一名「肉宅」。

 

傳統茶道體驗

茶道是一項優雅的傳統,蘊含著數百年來的文化精髓。茶藝師David將會為賓客展示正宗的台灣傳統茶道,賓客們將品嚐著名的東方美人茶(白毫烏龍),體驗精準沖泡過程,感受茶道中的寧靜與沉思。

 

DJ與古箏的創意結合

準備好被這場前所未有的表演所吸引吧!這場演出將東方古典優雅的古箏——以其清新流暢的音色著稱的中國傳統樂器——與現代DJ的節奏與律動完美結合。這場音樂融合,既展現了東方音樂的悠久之美,又帶來了現代音樂的活力,形成一個既傳統又創新的迷人音景。

 

台灣咖啡品鑑

台灣咖啡豆種植在中部山區雲霧繚繞的環境中,擁有濃郁的香氣、順滑的口感,風味層次豐富,常帶有淡淡的水果或堅果香。台灣的咖啡農們秉持永續和精緻的農法,用心培育出能完美展現台灣獨特風土的咖啡豆。在美食節現場體驗台灣咖啡的迷人風味,還有沖煮示範和製作過程的介紹,讓大家深入了解每一杯台灣咖啡背後的手作精神。一起來發現為何台灣咖啡正逐漸成為在地及國際間備受喜愛的珍品吧!

 

懷舊美食挑戰賽

The Sydney Taiwan Food Festival showcases Taiwan’s vibrant food culture to Australian audiences and offers Taiwanese residents a taste of home. Taiwan’s diverse historical background has shaped a rich and inclusive culinary tradition, with food being a deep cultural expression. Australia’s multicultural society embraces global flavours, with Taiwanese street food standing out for its distinctiveness. The festival provides a unique opportunity to experience Taiwanese culture through its cuisine, fostering a deeper appreciation of its heritage and enriching Australia’s culinary landscape.

The Taiwan Food Festival at Prefe4cture 48 brings together the essence of Taiwan's food, art, and culture, Taiwanese chef Omar Hsu will collaborate with Prefecture 48 chef Hiroshi Manaka to present classic Taiwanese dishes prepared in different culinary styles. Meanwhile, another Prefecture 48 chef, Takashi Yamamoto, will join Taiwanese chef Chang-yun Chiang to showcase Taiwanese street food and other classic dishes. The experience will be enriched by artist Ruth Li’s sculptures, a traditional Guzheng performance with a DJ, and an authentic Taiwanese tea ceremony, Taiwan coffee tasting creating an immersive celebration of Taiwan’s vibrant culinary and artistic heritage. 

Prefecture 48 Nestled within the illustrious heritage precinct lies six exclusive venues, each a testament to Australia’s most respected and considered talents. Every corner of the precinct is thoughtfully designed to showcase the exquisite art forms and vibrant movements that define the beauty of Japanese cuisine. More exciting is that Prefecture 48 will provide Canapés & Beverage Package throughout the event.

The core concept of this event is to represent Cuisine, Art, and ILHA FORMOSA (美食,美術,美麗的島)

  • Cuisine: Taiwanese cuisine, influenced by China, Japan, and Southeast Asia, will be highlighted at the Taiwan Food Festival. A Taiwanese chef will present traditional dishes, while P48 chefs will add their interpretations, blending Michael and Jack’s childhood recipes for a fusion of flavours.
  • Art: Ruth Li, a Taiwanese-Australian artist, blends her cultural heritage into her ephemeral sculptures, symbolising renewal, life cycles, and time's passage. Her work reflects personal meditations on change, seasons, and returning to earth, capturing moments of introspection.
  • ILHA FORMOSA: Taiwan, known as "ILHA FORMOSA" or "Beautiful Island," is celebrated for its harmony of nature, culture, and history. This festival showcases Taiwan’s beauty through its flavours, traditional cuisine, and art, blending culinary heritage with artistic expressions to immerse guests in its vibrant culture.

Together, 美食, 美術, 美麗的寶島 form the perfect harmony, offering a complete, immersive experience of Taiwan’s culture.

 

Event highlights:

Ruth Li' Sculpture Showcase

Ruth Ju-Shih Li (b. 1992, Taipei) graduated with a Bachelor of Fine Arts (Honours) from the National Art School, Darlinghurst, in 2013. Her work explores traditional and multicultural beauty, transcendence, and the sublime, using cross-cultural language to express spirituality. Her layered imagery symbolises the self and reflects the transient nature of human existence.

 

Iconic Taiwan Chef Ommr and P48 chef Hiroshi Manaka Cuisine Showcase at GARAKU

We are delighted to invite a renowned Taiwanese chef Ommr Hsu to collaborate with P48 Chef Hiroshi Manaka, showcasing an exciting culinary “collision” between authentic Taiwanese fine dining and Japanese – French cuisine.

Omar Hsu, a Taiwanese chef with over twenty years of experience in some of Australia’s top restaurants—including Solotel, Aria Restaurant, and Barangaroo House under the mentorship of acclaimed chef Matt Moran—founded Ommi’s Food & Catering, an Asian-inspired frozen meal and catering company.

Chef Hiroshi Manaka is a respected figure in the culinary world, having refined his skills in Michelin-starred restaurants across Europe. His journey began in Italy at Villa Crespi and Da Vittorio, and he later immersed himself in Spain’s culinary scene, working in celebrated kitchens like Mugaritz in San Sebastian and QuiQue Dacosta in Denia.

 

Taiwan Chef Chang-yun Chiang and P48 Chef Takashi Yamamoto’s Showcase at IBUSHI

Embark on a culinary journey at IBUSHI, where Taiwan Chef Chang-yun Chiang from Baodao and Prefecture 48 Chef Takashi Yamamoto showcase their culinary artistry. Together, they bring Michael and Jack's nostalgic childhood recipes to life with a fresh, creative twist on Taiwanese cuisine and snacks!

 

Chang-yun Chiang is the owner and head chef of Bao Dao, one of Sydney’s celebrated Taiwanese restaurants. "Bao Dao," meaning "Treasure Island," represents not only authentic Taiwanese cuisine but also a heartfelt sense of hospitality. From the moment you step into the restaurant, you’ll feel right at home.

With over two decades in the industry, Takashi Yamamoto trained and practiced in both yakiniku and kaiseki before following his heart as a ‘meat-otaku’ to specialise in yakiniku.

 

Traditional Tea Ceremony

The tea ceremony is a graceful tradition reflecting centuries of heritage. Tea master David will showcase an authentic Taiwanese tea ceremony for guests, featuring the renowned Oriental Beauty (Baihao Oolong) tea. This experience showcases the art of tea preparation while embracing tranquillity and mindfulness.

 

DJ and Guzheng Performance

Prepare to be captivated by a one-of-a-kind performance that seamlessly blends the ancient elegance of the guzheng—a traditional Chinese zither known for its ethereal, flowing tones—with the contemporary beats and rhythms of a DJ. This fusion celebrates both the timeless beauty of Eastern music and the dynamic energy of modern sound, creating a mesmerising soundscape that bridges tradition and innovation.

 

Taiwanese Coffee Tasting

Grown in the misty, mountainous regions of central Taiwan, Taiwanese coffee beans are prized for their rich aroma, smooth texture, and complex flavour profile, often featuring subtle notes of fruit and nuts. Taiwan’s coffee farmers use sustainable, artisanal methods to produce beans that capture the essence of the island’s unique terroir.
 

Nostalgic food Challenge

Get ready for the Nostalgic Food Speed Eating Challenge, where participants will race to finish iconic Taiwanese dishes that remind us of cherished memories. It’s a fun and energetic way to celebrate Taiwan’s beloved food traditions, filled with exciting competition and delicious flavours!
